Wheat dampening is an important part of the cleaned wheat before milling. Under different water conditions, wheat cortex and endosperm will have different resistance to external forces. Hence, the milling performance of wheat is maximally optimized by uniform and appropriate wheat dampening.
Water can make the wheat husk more resilient and not easy to break;
Water can make the endosperm softer and easier to crush;
Water is beneficial to the separation of bran and wheat flour;
